Aloo gobi is simple, flavorful and easy side dish which goes well with rice as well as roti or chapati. It is simple potato and cauliflower based side dish cooked in onion tomato masala. This is one of the most common side dishes I make for Chapati or Paratha.
We can do lot of variations to the recipe. Microwave the potatoes and cauliflower to save the time while cooking. You can boil them and use it too. You can shallow fry the potatoes and cauliflower and make the curry too. Potatoes and cauliflower should not be overcooked to retain its crunchiness. This is very long pending post and finally I am posting it. Now lets check how to make simple Aloo Gobi.

Ingredients
- Potato 4 medium
- Cauliflower 2 ½ cup
- Onions 2
- Tomato 1
- Red chilli powder 1 ¼ tsp
- Salt 1 tsp
- Garam masala ½ tsp
- Chaat masala ¼ tsp
- Kasuri methi 2-3 tsp
- Oil 1-2 tbsp
- Cumin 1 tsp
Instructions
- Wash and cut the potatoes as cubes and cauliflower.
- Microwave them for 3-4 minutes till 70% cooked.
- Finely chop the onions and keep it ready.
- Heat oil and temper with cumin seeds
- Once it browns add the finely chopped onions and saute till transparent
- Then add the tomatoes and saute till mushy.
- Then add the turmeric powder, red chilli powder, garam masala and salt.
- Next add the half cooked potatoes and cauliflower.
- Mix it nicely, close and allow it to slow cook till potatoes and cauliflower is done.
- Add kasuri methi to it and mix.
- Finally garnish with coriander leaves and switch off the flame.
- Aloo Gobi is ready. Serve it with rice or roti.

How to make Aloo Gobi with step by step pictures
