Banana Rasayana Recipe | How to make Banana Rasayana recipe with step by step pictures and instructions. Banana Rasayana is popular dessert from Mangalore/Udupi region. It is usually served with neer dosa. It is so delicious as such and can be enjoyed as a dessert. I always prefer this way than as side dish. It requires only three ingredients banana, coconut milk and jaggery/sugar.
It is simple no cook recipe which can be put together in 10 minutes if you have coconut milk ready. Always use homemade coconut milk and it taste so good. Best way to use leftover bananas. I added some nuts to make it more rich. You can flavor them with cardamom powder, cinnamon powder or nutmeg.

Ingredients
- Banana 4 medium
- Powdered jaggery 4-5 tbsp
- Cardamom powder 1 tsp
- Nuts 2 tbsp optional
- Coconut 1/2
- Water 1 cup
Instructions
- Take the chopped coconut pieces in mixer
- Grind it nicely adding little water.
- Then extract the coconut milk adding 1 cup of water.
- Chop the banana as round pieces and keep it ready.
- Take extracted coconut milk in a bowl.
- Add sugar to it.
- Then add cardamom powder and mix.
- Finally add the chopped banana.
- Top it with nuts.
- Banana rasayana is ready
- Serve it immediately or chilled.
Notes
Coconut milk must be thick so don't add too much water.
I used half of the medium sized coconut.
You can use sugar instead of jaggery. Adjust the sugar according to your preference.
We like to refrigerate and have it chilled as dessert
