Bitter gourd is one of the vegetables where most people hate to eat it. But I love to eat this pavakkai masala which my mom makes and it won't have the bitter taste. It has lot of health benefits and good for diabetics and helps in weight loss. We love to eat as side dish with sambar.
Addition of lot of onions, tamarind and jaggery makes this dish so tasty and you won't get the bitter taste. Scrape the outer green edges, cut and mix it with salt and leave aside for sometime to remove the bitter taste. Also allow it to saute nicely for longer time. You can allow the bitter gourd to cook in oil to improve taste and remove bitterness.

Bitter Gourd Masala | Pavakkai Masala recipe
Ingredients
- Bitter gourd 175 grams
- Onions 2
- Tomato 1
- Red chilli powder 1 tsp
- Turmeric powder ½ tsp
- Salt as required
- Oil 2 tbsp
- Tamarind extract 2 tbsp
- Jaggery powder 1 tsp
Instructions
- Wash and cut the bitter gourd. I finely chopped them so it gets mixed with onions and tomatoes
- Add salt to it and leave it for 30 minutes.
- After 30 minutes squeeze the water and keep it ready. This helps to remove bitterness.
- Finely chop onions and tomatoes
- Heat oil in kadai
- Add the bitter gourd and mix
- Add salt and continue to saute
- Saute nicely till it is golden in color
- Now add finely chopped onions, tomatoes and spice powders
- Add little water and allow onions and tomatoes to saute nicely. You can add more oil in this stage instead of water.
- Now add the tamarind extract and jaggery powder.
- Saute nicely for 5-10 minutes till it is combined and oil separates
- Serve pavakkai masala with hot rice
