Black Forest Cake Recipe | Black Forest gateau | Whole Wheat Black Forest Cake recipe with step by step pictures and instructions. Black Forest Cake is chocolate sponge cake soaked in cherry syrup with layers of cream and decorated with chocolate and cherries. It is one of the classic German dessert and it is very easy to prepare this cake in home. Traditionally they use kirschwasser liquor to make these cakes but cherry syrup is good alternative used across everywhere.

I have made it many times and it is always hit. You can reduce the amount of whipping cream as you like. Store bought cake always have too much cream and many don’t prefer. I have used wheat flour with eggs for the chocolate sponge. If you are looking for eggless chocolate sponge you can try base which I used for Peter Rabbit Cake. So moist, soft and perfect cake for parties or to celebrate any occasions. Garnish the cake with chocolate savings and cherries on the top.

Foodie Monday Bloghop

I made this cake for my father’s birthday longtime back and it was pending in my drafts. This is right occasion to post this cake to celebrate milestone in our Foodie Monday Bloghop group.Regular readers of my blog would know about Foodie Monday Bloghop group where we post on particular theme every Monday. It is special this week as we celebrate 250th bloghop #250CelebratewithCake. I joined this group nearly a year back on theme 202 and my first post is Chocolate Brownie.

I remember Mayuri introduced me to this group and we had discussion about the same and first I was thinking if it is possible for me to post every monday and now it has become the routine and every monday we look forward to select new themes for next week. Ingredients

  • Wheat flour 1 cup
  • eggs 2
  • Sugar 1/2 cup
  • Baking powder 1 tsp
  • Oil 1/4 cup
  • Milk 1/4 cup
  • Vanilla essence 2 tsp
  • cocoa powder 3 tbsp
  • Cherry syrup
  • cherry 1/2 cup chopped
  • Water 1 cup
  • Sugar 1/4 cup
  • Assembling
  • Whipped Cream Frosting as required
  • Chocolate grated as required
  • Cherries on top

Instructions

    Making Chocolate Sponge
  1. Take wheat flour, cocoa powder, baking powder and sieve them 4-5 times and keep it ready.
  2. Take eggs in a bowl and beat them for few seconds.
  3. Then add sugar, oil and vanilla essence
  4. Beat them till combined
  5. Now add flour in batches and mix them without lumps.
  6. Finally add milk and mix the batter to dropping consistency.
  7. Grease the pan with butter and dust it with flour.
  8. Pour the batter to greased tin and tap to release air.
  9. Preheat the oven to 180°C and bake in the same temperature for 35-40 minutes till tooth pick inserted comes out clean.
  10. Cherry Syrup
  11. Take water, chopped cherries and sugar in sauce pan.
  12. Boil them till sugar melts and mixture thickens.
  13. Assembling
  14. Once the cake cools down completely slice them as two layers.
  15. You can cut the top part and trim the edges too.
  16. Prepare the Whipped Cream Frosting as per the instructions.
  17. In the turn table place the cake board and apply some whipped cream to it
  18. Place the first layer of cake
  19. Brush it with some cherry syrup
  20. Apply whipped cream on top of it and spread evenly
  21. Add some chopped cherries from the syrup on top of it.
  22. Place the next layer of cake on the top
  23. Brush it with some cherry syrup
  24. Apply whipped cream on top of it.
  25. Apply evenly on the sides too.
  26. Decorate the sides with chocolate savings. Grate the chocolate and use it.
  27. Pipe the remaining whipped cream and garnish with cherries.
  28. Add some more chocolate savings on the top layer to cover it.
  29. Delicious Black Forest Cake is ready.

Notes

Baking time will vary depending on oven so always keep an eye after 40 minutes

I made small pan with two layers. You can double the quantity and make more layers.

If you are using cherries from tin you can use the same syrup for soaking the cake.

Always wait for the cake to cool completely before cutting as well as moulding from the tin.

I always keep parchment paper on the sides while decorating so it is easy to remove and board won't get spoiled.

Always store the cake in fridge and remove 1 hour before cutting.

I used one cup of whipping cream to make frosting.

    • Thanks Priya. Waiting to see your creation. You can use glace cherries but those are already sweet so sugar may not be needed or add very little according to your taste.
