Bottle Gourd Basundi is fusion dessert where traditional basundi is flavored with bottle gourd. Basundi is thickened milk dessert prepared by simmering the milk till it reduces to half of its volume and garnished by nuts, cardamom and saffron. Bottle gourd is also known as sorakkai in tamil and Lauki in hindi. Bottle gourd is rich in fibre and helps in weight loss as its fat content is very low. It helps to keep the body hydrated during summer as its water content is more.

Basundi is one of our favorite dessert in home and would love to have it chilled. I got this idea of using sorakkai from my SIL. It is healthy and you would not find its taste. I have followed the traditional method by simmering milk for long time. Consistency of basundi will be in between kheer and rabri. You can use condensed milk or cream to make it rich and reduce the cooking time. You can prepare this well ahead and serve it for parties or any special occasion. In north they serve warm/hot Basundi with poori.

Ingredients

  • Bottle gourd/Sorakkai 1 cup
  • Milk 2 cups or 1/2 litre
  • Sugar 3-4 tbsp
  • Ghee 1 tbsp
  • Cardamom powder 1 tsp
  • Cashews 1 tbsp
  • Badam 1 tbsp
  • Saffron few strands
  • Pista 1 tbsp

Instructions

  1. Peel the skin of bottle gourd and discard the center part with seeds and grate them finely.
  2. Heat ghee in a pan.
  3. Add the grated bottle gourd and saute it for 3-4 minutes till all its moisture is absorbed.
  4. Then add milk and allow it to boil.
  5. Once it comes to boil reduce the flame
  6. Keep stirring scraping the sides till it reduces to half of its volume. it will take around 20-25 minutes.
  7. Then add sugar and continue to boil for 5 minutes. Consistency can be little thin as basundi will get thicker after cooling down.
  8. Garnish with chopped nuts, cardamom powder and saffron and mix.
  9. Switch off the flame and allow it to cool down.
  10. Serve chilled Lauki basundi

Notes

Adjust the sugar according to your taste

Consistency of basundi can be little thin when switching off as it gets thicker after cooling down.

Add saffron for rich taste. I skipped them this time since I didn't have it in stock.

You can add little milk to dilute if basundi is too thick while serving

How to make Bottle Gourd Basundi with step by step pictures
