Bottle Gourd Basundi | Sorakkai Basundi | Lauki Basundi
Bottle Gourd Basundi | Surakkai Basundi | Lauki Basundi recipe with step by step pictures and instructions. Bottle Gourd Basundi is fusion dessert where traditional basundi is flavored with bottle gourd. Basundi is thickened milk dessert prepared by simmering the milk till it reduces to half of its volume and garnished by nuts, cardamom and saffron. Bottle gourd is also known as sorakkai in tamil and Lauki in hindi. Bottle gourd is rich in fibre and helps in weight loss as its fat content is very low. It helps to keep the body hydrated during summer as its water content is more.
Basundi is one of our favorite dessert in home and would love to have it chilled. I got this idea of using sorakkai from my SIL. It is healthy and you would not find its taste. I have followed the traditional method by simmering milk for long time. Consistency of basundi will be in between kheer and rabri. You can use condensed milk or cream to make it rich and reduce the cooking time. You can prepare this well ahead and serve it for parties or any special occasion. In north they serve warm/hot Basundi with poori.

Then add milk and allow it to boil.
