Cabbage Thoran Recipe | Kerala style Cabbage Stir fry | Cabbage Upperi recipe with step-by-step pictures and instructions. Cabbage thoran is a simple poriyal recipe from Kerala. It is one of the essential dishes of Onam Sadya.
What is Thoran?
Thoran is dry vegetable dish made with coconut and speciality of Kerala. It is also called as Upperi. It is made with different vegetables like cabbage, carrot, beans, beetroot, and spinach.
Cabbage is sauteed in coconut oil along with freshly grounded coconut, green chilli, and cumin. It is so flavorful, quick and easy to make too. It is served as side dish for rice along with sambar.

Ingredients
- Cabbage - Key ingredient of the recipe
- Tempering - Temper with mustard, urad dal, cumin, curry leaves, and red chilli
- Grounded Masala - Make coarse paste of coconut, cumin and green chilli.
- Coconut oil - Makes it so flavorful.

Instructions
Finely chop the cabbage, wash, and drain the water.
In a mixer take grated coconut, green chilli, and cumin seeds.
Pulse it coarsely and make them ready.
Heat coconut oil in kadai and temper with mustard, urad dal, cumin seeds, red chilli and curry leaves.
Once it browns add the finely chopped cabbage and saute for 1 minute.
Add salt, hing and turmeric powder to it.
Sprinkle little water and allow it to cook.
Close with lid and cook for 3-4 minutes.
Then add the ground masala.
Cook for a few minutes and switch off the flame. Delicious cabbage thoran is ready.
Notes
- Use fresh cabbage for good results.
- Adjust the green chilli according to your preference
- Use small onions along with coconut.
- You can use other veggies like beans, carrot along with cabbage

Ingredients
- Cabbage 1 cup tightly packed
- Salt as required
- Turmeric powder ½ tsp
- Hing ¼ tsp
To grind
- Grated coconut ¼ cup
- Green chilli 2
- Cumin 1 tsp
To temper
- Coconut oil 2 tsp
- Mustard ½ tsp
- Urad dal ½ tsp
- Cumin seeds ½ tsp
- Curry leaves few
- Red chilli 2
Instructions
