Christmas Fruit and Nut muffins | Whole wheat fruit and nut muffins without oven recipe with step-by-step pictures and instructions. Fruit and nut muffins are moist, soft, and delicious muffins made with dry fruits and nuts. This recipe is eggless and made using whole wheat flour and brown sugar. You can enjoy them guilt-free as evening snacks or make them for parties.
I had some leftover soaked dry fruits after making Calcutta fruit cake. So thought of making muffins using those dry fruits. I tweaked my whole wheat cake recipe and came up with this one. It was so moist, soft, and the texture was so good. Next time I will increase the dry fruits a little so I can get in every bite. Don't worry if you don't have an oven, you can make it as easily in Kadai as I made.

Ingredients
- Wheat flour 1.5 cups
- Baking powder 1 tsp
- Baking Soda 1/2 tsp
- Cashews 1/3 cup
- Almond 1/4 cup
- Soaked dry fruits 3/4 cup
- Orange juice 1/2 cup
- Milk 3/4 cup
- Lime juice 2 tsp
- Sugar 3/4 cup
- Oil 1/3 cup
- Mixed spice 2 tsp
Instructions
- Take cashews, almonds in a mixer.
- Pulse them into a coarse mixture.
- Take wheat flour, baking powder, baking soda and sieve them 4-5 times.
- Take milk, add lime juice to it, mix and keep it aside for 5 minutes.
- Then add sugar and oil to it and mix.
- Next, add orange juice to it.
- Then add flour mixture in batches and mix without lumps.
- Next, add the soaked dry fruits and nuts to it and mix.
- Then add mixed spice to the batter.
- Mix everything till it is combined.
- Grease the muffin cups or place liners in muffin tray.
- Fill the batter to 3/4th of the liner and tap nicely to release air.
- Heat Kadai, place the plate in it, and preheat for 6-8 minutes.
- Place the muffins cups or tray in the Kadai.
- Bake for 15-20 minutes till the toothpick inserted comes out clean.
- Cool down and enjoy the fruit and nut muffins
