Coffee Chocolate Muffins Recipe | Coffee Cocoa muffins without oven recipe with step by step pictures and instructions. Coffee chocolate muffins is perfect combo of coffee and chocolate and delicious treat for coffee lovers. These muffins are soft, little dense and have strong flavor of coffee. You can enjoy these muffins as snacks or can be had for breakfast as it is too filling.
As with most of my bakes, these muffins are free of refined flour and sugar. I have used combination of wheat and ragi flour. My Oven is not working for more than two months now and I am not sure when I can repair it. I am used to baking with stove now. Only thing is I can bake only a small batch at a time. This time I used my steamer. You can use idli cooker, pressure cooker or simple pan to bake. You can check my Butterscotch Cake recipe for baking in cooker.

She suggested to make something with coffee and I decided atleast I should use this chance to bake. My contribution to the theme is this coffee chocolate muffins.

Coffee Chocolate Muffins Recipe | Coffee Cocoa muffins without oven
Ingredients
- Wheat flour ½ cup
- Ragi flour ½ cup
- Cocoa powder 2 tbsp
- Coffee powder 1.5 tbsp
- Baking powder 1 tsp
- Hot water ¼ cup
- Oil ¼ cup
- Eggs 2 small
- Brown Sugar ½ cup
- Vanilla essence 1 tsp
Instructions
- Sieve wheat flour, ragi flour, cocoa powder and baking powder for 4-5 times and keep it aside.
- Take instant coffee powder in a bowl.
- Add hot water to it and mix.
- Take eggs in the bowl and beat for 1 minute.
- Then add oil and sugar and beat till it is combined.
- Then add coffee mix, vanilla essence and mix.
- Finally add the flour mix in batches
- Mix everything till it is combined.
- Grease the muffin cups or place liners.
- Fill the batter to ¾th of the liner and tap nicely to release air.
- Preheat the steamer for 5-7 minutes in medium flame. No need to add anything in the bottom.
- Place the cup cakes inside and bake in low flame.
- Bake for 15-20 minutes till the tooth pick inserted comes out clean.
- Cool down and enjoy the coffee chocolate muffins.
