Coriander Pesto Pasta Recipe | Coriander mint Pasta | Green pasta recipe with step-by-step pictures and instructions. Coriander pesto pasta is the Indian version of classic Italian pesto made with coriander and mint. You can pack this as lunch for kids. I used peanuts, you can use walnuts, almonds, or cashews.
My kids call this green pasta. I made it plain this time. You can add any vegetables, egg, or meat of your choice. You can make the pesto and store it in the fridge well ahead and use them as required. It will be so quick and easy to put together when you have pesto sauce ready.

How to make Coriander Pesto Pasta with step by step pictures
Boil water in a vessel
Once it boils add the pasta, 1 tsp oil and salt
Allow it to cook for 8-10 minutes till it is done. Drain the water and keep it aside
Clean, wash and take coriander, mint leaves in a mixer
Add peanuts, garlic to it.
Grind to a paste adding little water.
Heat olive oil in a Kadai
Add the coriander, mint paste to it.
Add salt, pepper powder, red chilli flakes and Italian seasoning to it.
Allow it to boil for 3-4 minutes and then add grated cheese to it.
Mix and allow it to cook for 1 minute. Now pesto sauce is ready.
Add the cooked pasta to it.
Saute in high flame till pasta is nicely coated with green sauce.
Coriander mint pesto pasta is ready.
