Egg kothu chapati is delicious and quick snack or dinner recipe made with leftover chapati. Kothu parotta is one of the famous street food which all of us love. This is simple version of the same using chapati.
Salna adds unique flavor and taste to the dish. We can use any leftover curry which is onion, tomato and spices based instead of salna. Vegetarians can skip eggs and add vegetables. Once you add the shredded chapati saute in high flame. Best way to use leftover chapati or salna and makes a quick dinner. You can even pack this for lunch box or make it as quick evening snacks for kids.

Ingredients
- Chapati 3
- Egg 2
- Onion 1.big
- Tomato 1 medium
- Green chilli 1-2
- Salna ¼ cup or as required
- Ginger garlic paste 1 tbsp
- Turmeric powder ¼ tsp
- Red chilli powder 1 tsp
- Garam masala ½ tsp
- Curry leaves few
- Coriander leaves 2 tbsp finely chopped
- Oil 1 tbsp
- Salt as required
Instructions
- Heat oil and add finely chopped onions and green chillies
- Saute it for 2 minutes and add ginger garlic paste
- Saute them till raw smell goes
- Then add tomatoes and saute them till mushy.
- Now move the mixture to one side and crack the eggs.
- Scramble them and add turmeric powder, red chilli powder and garam masala
- Then add the chopped chapati and mix.
- Finally add the salna and saute in high flame for 4-5 minutes.
- Garnish with finely chopped curry leaves and coriander leaves.
- Serve egg kothu chapati hot with curd or raita .
