Honey Cake is plain vanilla cake soaked in honey syrup and decorated with jam glaze and desiccated coconut. It is very famous in Iyengar Bakery outlets.
Ever since the lockdown started internet is flooded with Honey cake pictures and this tempted me to try soon. This is my healthy version of honey cake using wheat flour and powdered palm jaggery made in stove top without oven. I made this cake in the weekend to celebrate the anniversary of namscorner. Look forward to more sweet recipes as part of celebrations through out this month.

Eggless Honey Cake Recipe | Indian Bakery Style Honey Cake | Whole Wheat Honey Cake
Ingredients
- Wheat flour 1 ½ cup
- Baking powder 1 tsp
- Baking soda ½ tsp
- Powdered palm jaggery ¾ cup
- Curd ¾ cup
- Water ¼ cup
- Oil ⅓ cup
- Vanilla essence 2 tsp
Honey Syrup
- Water ⅓ cup
- Powdered palm jaggery 2 tbsp
- Honey 3 tbsp
Jam Glaze
- Jam 2 tbsp
- Brown sugar 1 tsp
- Water 1 tbsp
Topping
- Desiccated coconut ½ cup
Instructions
Sponge Cake
- Sieve wheat flour, baking powder and baking soda 5-6 times and keep it ready.
- In a bowl mix curd, jaggery and mix till it is melted.
- Filter the mixture to remove any impurities
- Then add oil and vanilla essence to it and mix.
- Then add the flour in batches and mix gently without lumps
- Next add water and mix.
- Fold batter gently and mix. Batter should be dropping consistency.
- Grease baking tin with butter/oil and line with parchment paper.
- Fill the batter to ¾th of the tin and tap to release air.
- Heat kadai, place plate in it and preheat for 6-8 minutes.
- Then place the cake tin in the kadai.
- Close it with lid and bake in low flame for 50 minutes till tooth pick inserted comes out clean.
- Once cake cools down, remove the cake from tin.
Honey Syrup
- Heat water and powdered palm jaggery in a pan.
- Once it boils nicely switch off the flame.
- Once it cools down, add honey to it and mix.
- Honey syrup is ready.
Jam Glaze
- Heat jam, brown sugar and water in pan.
- Heat till jam melts and it is thick and glossy.
Assembling
- Slightly remove the top layer and prick holes through out the cake with skewers or tooth pick.
- Pour the honey syrup all over the cake.
- Allow it to rest for ten minutes till honey syrup is absorbed.
- Apply the jam glaze on the top of the cake.
- Sprinkle desiccated coconut on top of the jam glaze.
- Slice and enjoy the Cake
- Bakery style eggless honey cake is ready.
