    Gulab Jamun Cake Recipe | Eggless Gulab Jamun Cake recipe with step-by-step pictures and instructions. Gulab jamun cake is an Indian fusion cake with one of the most popular desserts Gulab Jamun. This eggless cake is so soft, moist, spongy, and flavorful. Plain vanilla cake is flavored with cardamom and sugar syrup from Gulab jamun and decorated with cream, nuts, and Gulab Jamun.

    I prepared khoya Gulab Jamun for the cake. You can also make milk powder Gulab Jamun or store-bought for the recipe. I always love to try different cakes for celebrations and finally got to try this flavorful Cake. Check out another fusion Rasmalai Cake recipe I posted earlier.

    Regular readers of my blog would know about Foodie Monday Bloghop group where we post on a particular theme every Monday. It is special this week as we celebrate 300th blog hop #300thCelebrations. I joined this group nearly two years back on theme 202 and my first post is Chocolate Brownie. I have learned a lot from this amazing group. My contribution to the celebration is this Gulab Jamun Cake.

    Gulab Jamun Cake Recipe | Eggless Gulab Jamun Cake

    Gulab jamun cake is an Indian fusion cake with one of the most popular desserts Gulab Jamun.
    Prep Time 1 hour hour 30 minutes minutes
    Cook Time 50 minutes minutes
    Total Time 2 hours hours 20 minutes minutes

    Ingredients

    • Maida 2 cups
    • Sugar ½ cup
    • Baking powder 1 tsp
    • Baking soda ½ tsp
    • Sugar syrup from Gulab jamun ½ cup
    • Milk ¾ cup
    • Oil ½ cup
    • Cardamom powder ½ tsp
    • salt a pinch

    Whipped Cream

    • Whipping cream ½ cup
    • Icing sugar 2 tsp

    Decorations

    • Gulab jamun 10-15
    • Sugar syrup from Gulab Jamun as required
    • Nuts as required to garnish

    Instructions

    Preparing Sponge

    • Prepare the Gulab Jamun and keep it ready before starting to bake the cake.
    • Sieve dry ingredients maida, baking powder, baking soda, salt, cardamom powder 3-4 times and keep it ready.
    • Take milk and sugar in a bowl.
    • Mix till sugar is dissolved and add oil, sugar syrup from gulab jamun to it.
    • Mix wet ingredients till combined.
    • Add dry ingredients in batches.
    • Mix to form a thick batter.
    • Grease the baking tin with butter and dust some flour onto it or use parchment paper.
    • Pour the batter till ¾th of the tin and tap to release air.
    • Heat Kadai, place a plate in it, and preheat for 6-8 minutes.
    • Then place the cake tin in the Kadai.
    • Close it with lid and bake in low flame for 50 minutes till toothpick inserted comes out clean.
    • Allow the cake to cool down completely

    Whipped Cream Frosting

    • Check the detailed post of Whipped Cream Frosting to learn more tips and tricks.
    • Chill the bowl and whipping attachment in the freezer for 20 minutes.
    • Take whipping cream and sugar in the bowl
    • Beat it nicely till stiff peaks form.

    Assembling

    • Once the cake cools down cut the cake into two layers.
    • On the cake board or plate, apply little whipping cream.
    • Place the first layer of cake on it.
    • Apply sugar syrup on top of it.
    • Then apply whipped cream on the top and add some Gulab pieces on top of it.
    • Then place the next layer of cake.
    • Apply sugar syrup to it.
    • Then cover the cake fully with whipped cream. Scrap all the sides to give a smooth finish.
    • Decorate it with the whole Gulab jamun on the sides and top. Sprinkle some nuts on the cake.
    • Delicious Eggless Gulab Jamun Cake is ready.

    Notes

    I place parchment on all sides while decorating so anything spilled can be removed easily.
    Always cool the cake completely before cutting or decorating
    If you use the oven, preheat the oven to 180°C and bake at the same temperature for 40-45 minutes until the toothpick inserted comes out clean.
    Baking time will vary so always keep an eye after 40 minutes
    You can completely skip the cream and use only Gulab Jamun for decorations too.

    How to make Gulab Jamun Cake with step by step pictures
