Instant Mango Pickle recipe | Quick Mango Pickle Recipe with step by step pictures and instructions. Instant mango pickle is quick and easy pickle prepared using raw mangoes and tempered with roasted fenugreek powder, mustard and curry leaves. You can prepare this pickle in 15 minutes. During Summer this mango pickle is very common in our home and liked by everyone. Don't miss to prepare this easy and quick pickle during mango season.
It keeps well for 4-5 days. Always use dry spoon and store it in airtight container. Use more oil if you are planning to keep it for couple of days. Usually this will get over on the same day so I used less oil. It goes well with curd rice and we eat it as such too. Instant Mango Pickle recipe | Quick Mango Pickle Recipe
Ingredients
- Raw Mango 1 or 1 cup heaped
- Salt ¾ tsp
- Turmeric powder ½ tsp
- Red chilli powder ¾ tsp
- Gingely/sesame oil 1-2 tbsp
- Mustard 1 tsp
- Curry leaves few
- Hing ¼ tsp
- Roast and grind
- Fenugreek 1 tsp
- Red chillies 2
Instructions
- Chop the mangoes and keep it ready
- Dry roast fenugreek and red chillies in a pan.
- Allow it to cool down and grind to coarse powder in mixer.
- Heat oil and temper with mustard, Hing and curry leaves.
- Add the tempering to chopped mangoes.
- Add turmeric powder, red chilli powder, salt and 1 tsp of roasted powder and mix.
- Instant mango pickle is ready.

How to make Instant Mango Pickle with step by step pictures
Chop the mangoes and keep it ready
Dry roast fenugreek and red chillies in a pan.

Heat oil in a pan
Temper with mustard, Hing and curry leaves.
Add the tempering to chopped mangoes.
Add red chilli powder, salt and 1 tsp of roasted powder.
Mix nicely till everything is combined and check the seasoning
Instant mango pickle is ready.
