    What is Keerai?

    Any type of greens is called as Keerai in Tamil. We can use any variety of greens for this recipe. I have used amarnath(mula keerai) to make this vada. Grind the batter coarsely to make the vadai crunchy.

    I sometimes add keerai to my Masala Vada and make it. But this recipe is quite different where we use mixture of urad dal and chana dal. It will be very similar to how we get in roadside shops or restaurants.

    Challenge for this month in FB group is greens on my plate suggested by Seema. she made the delicious for the theme. I was paired with Mayuri who made Stir Fried Pak Choy using the secret ingredients sesame seeds and garlic. I made this crunchy keerai vadai using the secret ingredients Amarnath leaves and ginger.

    Ingredients

    • Keerai - Use any types of greens.
    • Urad dal - Main ingredient of the recipe.
    • Chana dal - adds crunchiness.
    • Green chilli - Adjust according to the spiciness required.
    • Ginger
    • Salt
    • Hing

    Instructions

    Take urad dal, chana dal in a bowl and soak for 2 hours.

          
    Wash the greens, finely chop them and keep it aside.


    After two hours, drain the water completely from dal and take it in a mixer.


    Add green chilli, cumin seeds and ginger to it.


    Grind to a coarse paste without adding any water. You can sprinkle little water if it is difficult to grind


    Transfer it to a bowl.


    Add finely chopped keerai, salt and hing to it.


    Mix everything to thick batter.


    Dip the hands in water and shape the vada in parchment paper or banana leaf and put a hole in the centre.


    Heat oil and drop the shaped vada and fry them till golden.


    Drain in a tissue and repeat the same for rest of the mixture.
    Serve it with hot Tea/Coffee.

    Ingredients

    • Urad dal 1 cup

    • Keerai 2 cups
    • Green Chilli 4
    • Cumin seeds 1 tsp
    • Ginger 1 tsp
    • Salt as required
    • Hing ¼ tsp
    • Oil for deep frying

    Instructions

    • Take urad dal, chana dal in a bowl and soak for 2 hours.
    • Wash the greens, finely chop them and keep it aside.

    Substitutions

    • Greens- I used amarnath but you can use any type of greens for the recipe.
    • Green chilli - You can substitute with red chilli.

    Variations

    • You can use only urad dal and completely skip chana dal as well.
    • Add onions along with greens.

    Top tip

    • Grind to coarse paste adding very little water as possible to make the vada crispy.
    • If you add more water, it will be difficult to shape the vada and also soak more oil.
    • Flatten the vada thin instead of making it thick.
    • Fry in medium flame and carefully cook both sides to get crispy vada.
    • Serve it with coconut chutney. I would love to eat it as such.

      It has been ages since I've enjoyed crunchy and delicious vadai. Like how you've added a generous amount of greens. One question, after your pat it on the parchment paper does it come off easily to drop in the oil? Want to make these keerai vadai.

      Narmadha this Keerai vadai is amazing and delicious. I need to make some they are definitelly what I can make for the guests we will have for tea tomorrow. Thanks for your yip of using parchment paper to shape the vadai. Will do exactly that.
