    Kothimbir Vadi Recipe | Maharashtrian Kothimbir Vadi Recipe | How to make Kothimbir Vadi recipe with step by step pictures and instructions. Kothimbir Vadi is crispy, crunchy and delicious snack from Maharashtra. Coriander leaves is known as Kothimbir in Marathi and it is the key ingredient in this recipe. Coriander leaves, besan flour and spices are mixed to form dough which is steamed and later deep fried to make it crisp. 

    This is one of the healthy and flavorful snack. To make it more healthy we can shallow fry the pieces or completely skip that step and enjoy the soft steamed vadi. I adapted the recipe from here and made few changes. We can do many variations to the base recipe like adding greens instead of coriander. Adjust the green chillies and spiciness according to your preference. We really enjoyed having them and I will surely make it again. Lets move to the recipe now.

    Kothimbir Vadi Recipe | Maharashtrian Kothimbir Vadi Recipe | How to make Kothimbir Vadi

    Kothimbir Vadi is crispy, crunchy and delicious snack from Maharashtra.
    Servings 10 pieces

    Ingredients

    • Besan Flour ½ cup
    • Rice flour 2 tbsp
    • Coriander leaves 1 cup
    • Green chilli 1
    • Garlic 2-3 cloves
    • Ginger chopped 1 tsp
    • Baking soda a pinch
    • Red chilli powder ¼ tsp
    • Coriander powder ¼ tsp
    • Turmeric powder ⅛ tsp
    • Water as required
    • oil for shallow frying

    Instructions

    • Clean, wash and dry the coriander leaves to absorb all moisture.
    • Take green chilli, ginger and garlic in mixer.
    • Grind them to coarse paste.
    • Take Besan flour, rice flour, salt, baking soda, red chilli powder, turmeric powder, coriander powder and add green chilli paste.
    • Then add finely chopped coriander leaves and mix.
    • Then sprinkle water and form smooth dough
    • Shape the dough as log and steam for 18-20 minutes till tooth pick inserted comes out clean.
    • Allow it to cool down and slice the pieces.
    • Heat oil in pan and shallow fry the pieces.
    • Flip and cook till it is golden and crisp.
    • Serve Kothimbir Vadi

    Notes

    Adjust the amount of coriander leaves according to your choice

      Sounds good. Your vadis seem to have turned out supe rcrisp and the pan fry version saves calories.

      Kotambir Vadi is truly delicious , i have made this umpteen times and it features in my regular menu . I like the round shaped one - it looks lovely , the greens make it really delicious .
