    Masala Vada Recipe | Masal Vadai | Paruppu vadai recipe with step by step pictures and instructions. Masala Vada is crispy and crunchy tea time snack made with chana dal. It is also called as paruppu(means lentils in tamil) vadai or chana dal vadai. Hot hot masala vada with Tea is perfect combo for evening snacks.

    It is so popular in street side stalls and restaurants in South India. We all love Medu Vada more than masala vada. So it will appear in our menu occasionally only. You should grind the batter coarsely to make it crunchy. Add any spices of your choice. Fennel and garlic makes it more flavorful. It is so quick and easy to make once you have the dal soaked.

My partner for this month is Jayashree who blogs at evergreendishes. I gave her salt and pepper  and she made the healthy Green peas soup . She gave me chana dal and green chilli and I made this crispy masala vada.

    Masala Vada Recipe | Masal Vadai | Paruppu vadai recipe

    Masala Vada is crispy and crunchy tea time snack made with chana dal.
    Prep Time 3 hours hours
    Cook Time 30 minutes minutes
    Total Time 3 hours hours 30 minutes minutes

    Ingredients

    • Chana dal 1 cup
    • Fennel 1 tsp
    • Garlic 5-6 optional
    • Ginger small piece optional
    • Red chilli 4-5
    • Green chilli 1 optional
    • Onion 1 medium
    • Curry leaves handful
    • Coriander leaves handful
    • Salt as required
    • Oil for deep frying

    Instructions

    • Wash and soak the chana dal for 2-3 hours.
    • Drain the water completely and keep it aside.
    • Take garlic, fennel and red chilli in a mixer.
    • Grind it coarsely.
    • Reserve handful of chana dal and add the remaining dal to mixer.
    • Pulse it 2-3 times and grind the chana dal mixture coarsely. Add few drops of water if required while grinding.
    • Transfer to the bowl.
    • Add salt, reserved chana dal, finely chopped onions, green chilli, curry leaves and coriander leaves to it.
    • Mix all ingredients well and mixture should be dry and easy to shape.
    • Take small lemon sized ball and flatten them in your hands.
    • Heat oil and drop the shaped vada and fry them till golden.
    • Drain them in tissue and repeat the same for rest of the mixture.
    • Crispy and crunchy masala vada is ready. Serve them with chutney.

    Notes

    Mixture should be coarsely grinded to make it crunchy.
    There should be much water in the chana dal while grinding. If the mixture is little loose, you can add little rice flour to bring together.
    In street side, sometimes they add little rava too.
    You can use banana leaf or parchment paper to shape the vada instead of making them in palms.
    You can skip onion and garlic and make it as no onion and garlic recipe.

    How to make Masala Vada with step by step pictures

    Wash and soak the chana dal for 2-3 hours.

    Reserve handful of chana dal and add the remaining dal to mixer.

    Pulse it 2-3 times and grind the chana dal mixture coarsely. Add few drops of water if required while grinding.

    Transfer to the bowl. Add salt, reserved chana dal, finely chopped onions, green chilli, curry leaves and coriander leaves to it.

    Mix all ingredients well and mixture should be dry and easy to shape.

      Masala Vada best enjoyed with some hot tea. Reminds me of enjoying these vada during the rainy season as street food. There was a man just opposite our apartment making them piping hot.

      Masala vada is one of my fav dishes for evening snack. I never tried to add fennel seeds to it. Should try this version. It is one of our evening snacks on a rainy day.

      Hot masala vadai and adrak wali chai is what I am craving for right now as the weather is very cold over here. I am sure the addition of fennel seeds along with dry red chilies must have made the vadai very flavorful.

      Masala vada looks very crispy , very well explained with step by step pics. Love to have this with hot tea as evening snack. We can also prepare it for breakfast , i just love to have it anytime. Loved adding fennel seeds which adds good aroma to vada.
