Homemade is always better than store bought stuff as there are no preservatives or artificial flavoring. You can make in small batches as and when you require them. It keeps well in fridge for one week to ten days.
First time I tried making mayonnaise without using eggs and it came out good few years back. I missed that recipe. This time I tried with eggs. I got this recipe from cooking book and made minor changes. You can use normal food processor for making it. I used my immersion blender. Even we can use normal whisk but it takes long time and energy.

- Egg 1
- Mustard ½ tsp
- Pepper powder ½ -1 tsp
- Sugar ¾ tsp
- Lemon juice 2 tsp
- Oil ¾ - 1 cup
- Salt as required
- Take egg, mustard, pepper powder, sugar, salt and lemon juice in a jug or bowl.
- Beat it with hand blender.
- Beat nicley till it is combined and frothy.
- Now add the oil in batches.
- Beat till it become creamy
- Adjust the salt, sugar and pepper powder according to your taste
