About the Recipe
No onion no garlic chana masala is a popular North Indian style gravy that goes well with poori, chapati, phulkas or naan. Usually during fasting, lot of people avoid using onions and garlic. You can make it during Navratri or any festivals when you observe fasting.
I got this recipe from one of my friends and ever since I tried this, it is a huge hit in home, and I have been making this regularly for family and friends. It is so simple and easy to make with handful of ingredients.

Challenge for this month in FB group is no onion and no garlic recipe suggested by Priya. She made the delicious Sweet Corn masala without onion and garlic. I was paired with Aruna who made Kaju Paneer using secret ingredients melon seeds and ginger. I made this chana masala and paired with whole wheat bhatura.
Ingredients
- Chickpeas - You can use white or black chickpeas.
- Tomatoes - Key ingredient which adds tanginess to the gravy
- Green chilli - Adds spiciness and flavor
- Spices - Red chilli powder, coriander powder, turmeric powder, Amchur powder, and garam masala.
- Tempering - Oil, bay leaf, cloves and cinnamon
- Garnishing - Kasuri methi and coriander leaves

Instructions
Wash and soak the chickpeas for 6-8 hours or overnight. Take soaked chickpeas in a pressure cooker along with salt and cook for 3-4 whistles.
Take roughly chopped tomatoes in a mixer.
Grind to a paste and keep it aside.
Heat oil and temper with bay leaves, cloves, cinnamon, and slit green chilli.
Add the tomato puree to it and saute for a few minutes.
Now add red chilli powder, turmeric powder, coriander powder, and garam masala.
Add a little water and allow it to boil.
Take handful of chickpeas in a mixer.
Grind to a thick paste.
Add the chickpeas paste to the gravy along with boiled chickpeas.
Allow it to boil till the raw smell of the masala goes.
Add Amchur powder and kasuri methi to it and mix.
Switch off the flame and garnish with coriander leaves.
Delicious no onion no garlic chana masala is ready. Serve it with any roti of your choice.
Serving Suggestions
Serve Chole masala with Poori, Bhatura, Chapati, Naan or Jeera rice.
If you are serving on fasting days, you can make roti with buckwheat flour.
Top tip
- Don't skip Amchur powder and kasuri methi. It adds a nice flavor to the gravy.
- You can use any chana or peas for making this gravy.
- Adjust the spices according to your preference.
- You can use canned chickpeas or tomatoes.

Ingredients
- Chickpeas 1.5 cups boiled
- Tomato 3 medium
- Green chilli 3-4
- salt as required
- Red chilli powder ½ tsp
- Coriander powder 1 tsp
- Turmeric powder ¼ tsp
- Garam masala ½ tsp
- Amchur powder ½ tsp
- Kasuri methi 1 tsp
- Coriander leaves a few for garnishing.

- Oil 1tbsp
- Bay leaf 1
- Cloves 2
- Cinnamon small stick
