Ooty varkey as the name implies is famous snacks from the hill station in Tamil Nadu, Ooty. Ooty is famous for its varkey since a very long time and they have even got Geographical indication certification for it. They source the raw materials locally. Climate condition and method of preparation of the recipe makes it so unique and you never get the same taste elsewhere. So don't miss trying varkey whenever you visit Ooty next time.
It is crispy and crunchy snack with internal layers similar to puff pastry. Usually they prepare the dough and allow it to ferment overnight. Then in the morning they use the fermented dough along with fresh flour to make the dough. There is baked as well as deep fried version of Varkey. I have tasted only baked version. There was no proper recipe of Ooty varkey in the internet. Our talented and expert baker Gayathri tried and shared the recipe with all of us with step by step pictures. So it was easy for us to try and everyone enjoyed having them.

Ooty Varkey Recipe | Baked Ooty Varkey | How to make Ooty Varkey
Ingredients
- Maida ¾ cup
- Sugar 2 tbsp
- Oil 2 tbsp
- Salt as required
- Water as needed
Layering
- Oil as required
- Maida as required
Instructions
- Take maida, sugar and salt in a bowl and mix.
- Add oil to it and mix till it is crumbly
- Add water little by little to form soft dough.
- Cover and set aside for 4-5 hours.
- Take dough in the counter.
- Roll them as thin rectangular sheet which is transparent. Apply oil so it doesn't stick.
- Then add little maida and oil and form the paste.
- Apply the paste all over the rolled dough.
- Then fold ⅓ rd of the rectangle both sides and bring together.
- Then add maida and oil again and form the paste and spread.
- Now again fold both the sides to form a square.
- Then roll it again to form rectangle.
- Then slice them as strips
- Lift each strip and pull and form round shape pinching in the top.
- Preheat oven to 180°C and bake in the same temperature for 40-45 minutes till it is brown.
- Cool on wire rack and enjoy with a cup of Tea/Coffee.
