Peanut Rice | Verkadalai sadam Recipe with step by step pictures and instructions. Peanut rice is south Indian style variety rice made using coarsely ground peanuts and spices. Perfect for lunch box. Prepare the peanut podi in advance and you can prepare the rice in busy morning quickly. You can store the peanut podi in fridge for 10 days and use them as required.
You can use any variety of rice or even leftover rice can be used to make this rice. Serve it with simple potato roast or thogayal. While grinding powder them coarsely as peanuts will release oil. Generally variety rice is not preferred by hubby so I mostly make this for me or even some guests are coming. Let's check how to make this quick and simple peanut rice for lunch box.

Peanut Rice | Verkadalai sadam Recipe
Ingredients
- Cooked rice 3 cups
- Sesame oil 1 tbsp
- Mustard ½ tsp
- Urad dal ½ tsp
- Chana dal 1 tsp
- Peanuts 2 tbsp
- Curry leaves few
- Hing 2 pinch
Peanut Powder
- Peanuts ½ cup
- Red chilli 3
- Coconut 2 tbsp grated
- Chana dal 1 tsp
- Urad dal 1 tsp
- Oil 2 tsp
Instructions
- Remove the skin of peanuts
- Take them in pan, roast and transfer to plate.
- Then in the same pan add oil chana dal, urad dal and red chilli.
- Once it browns add the grated coconut.
- Saute them for a minute and allow it to cool down
- Take the mixture and peanuts in mixer and grind to coarse powder
- Store them in a container and use as required
- Heat oil and temper with mustard, urad dal, chana dal and peanuts.
- Add curry leaves to it.
- Once it browns add it to cooked rice.
- Add the peanut powder as required
- Mix everything together. Check the seasoning and adjust the salt and peanut powder as required.
- Yummy peanut rice is ready.

How to make Peanut Rice with step by step pictures
