Pongal Kuzhambu Recipe | Mixed vegetables Sambar for Pongal Festival recipe with step by step pictures and instructions. Pongal kuzhambu is traditonally made during Pongal festival using freshly harvested vegetables. They usually use 5 or 7 different types of country vegetables to make this sambar. Each region will have its own method of preparing this pongal sambar using coconut, tamarind and dal.
I am sharing the recipe which I learnt from my mother. It goes well with Paal Pongal. Usually they use country vegetables like avarakkai, mochai, vazhakai, yam, pumpkin, sweet potato to make this kuzhambu. Generally this sambar will be more tangy compared to normal sambar.

Pongal Kuzhambu Recipe | 7 vegetables Sambar for Pongal Festival
Ingredients
- Onions 1 big
- Tomato 2 small or 1 big
- Salt as required
- Red chilli powder 2 tsp
- Coriander powder 3 tsp
- Sambar powder 1 tbsp
- Tamarind paste 1 tbsp
- Oil 2 tsp
- Mustard ½ tsp
- Urad Dal ½ tsp
- Curry leaves few
- Coriander leaves to garnish
Vegetables
- Raw banana ½ cubed
- White pumpkin 10-12 cubes
- Carrot ½ cup cubed
- Broad beans 5
- Beans 4-5
- Brinjal 3
- Sweet potato ½ cubed
- Mochai/Field beans ¼ cup
Cooking Dal
- Toor Dal 1 cup
- Water 2 ½ cup
- Turmeric powder ½ tsp
- Hing ½ tsp
Instructions
- Wash the dal and add water, turmeric powder and hing to it.
- Pressure cook for 1 whistle in medium flame and cook in low flame for 5 minutes. Once the pressure releases, open and mash the dal.
- Cut all the vegetables and keep it ready.
- Heat oil and temper with mustard, urad dal and curry leaves.
- Then add onions and saute for 1 minute.
- Then add the chopped tomatoes and saute till soft.
- Now add raw banana, beans, carrot, broad beans and mochai first and give a quick stir.
- Then add red chilli powder, coriander powder and sambar powder.
- Add little water, close and allow it cook.
- Once it is half cooked, add pumpkin, sweet potato and brinjal.
- Once it is boiled add the cooked dal and allow to boil.
- Now add the tamarind paste and allow to boil for 5-10 minutes.
- Finally switch off the flame and garnish with coriander leaves.
- Mixed vegetable sambar is ready.
- Enjoy it with Paal Pongal or rice.

How to make Pongal Kuzhambu with step by step pictures
