Ratlami Sev Recipe | How to make Ratlami Sev recipe with step by step pictures and instructions. Ratlami sev is popular snack from Madhya Pradesh made using besan and spices. Each region will make sev in different ways. Uniqueness of the recipe comes from special spice prepared using cloves, cinnamon, pepper, fennel, ajwain and jeera. It gives unique taste and flavor to sev.
Thanks to Blogging Marathon which made me to explore some interesting snacks from different states. My little one loved this a lot and it got over so soon. I adapted the recipe from here and made few changes according to the ingredients I had in stock. I reduced the spice level so kids can eat. Lets see how to make this crunchy and crispy ratlami sev.

Ratlami Sev Recipe | How to make Ratlami Sev
Ingredients
- Besan flour 2 ½ cup
- Salt as required
- Turmeric Powder ¼ tsp
- Red chilli powder ¼ tsp
- Hing a pinch
- Baking soda ¼ tsp
- Oil 2 tbsp
- Lime juice 1 tsp
- Water as required
- Oil for frying
- To roast and grind
- Clove ¾ tsp
- Fennel seeds ½ tsp
- Ajwain seeds ¼ tsp
- Jeera 1 tsp
- Pepper 1 tsp
- Cinnamon ½ inch.
Instructions
- Dry roast the spices given under to roast and grind.
- Once it cools down, transfer to mixer and grind to powder.
- Take besan flour in a bowl and add all ingredients except oil. Add spice mix to it and combine.
- Then add oil and mix it.
- Then add water and knead to smooth dough.
- Grease the murukku mold and load the dough.
- Heat oil and press the sev in hot oil.
- Allow it to cook till bubbles subsides and drain in kitchen tissue.
- Repeat the same for rest of the dough.
- Ratlami Sev is ready
