    Rava Kesari Recipe | Kesari Recipe | How to make Rava Kesari recipe with step by step pictures and instructions. Rava Kesari is common sweet recipe in South India made with rava or suji, sugar, ghee and nuts. It is one of the simple and quick sweet which can be made in 20 minutes.

    Kesari refers to bright orange color which can be achieved naturally by adding saffron or food color. Kesari is so soft and have melt in mouth texture. This is most commonly made sweet in our home as a kid and my mom make this on birthday and special occasions too. Just make sure to keep the flame in low and add rava slowly and continue stirring to avoid forming lumps.

    Rava Kesari Recipe | Kesari Recipe | How to make Rava Kesari

    Rava Kesari is common sweet recipe in South India made with rava or suji, sugar, ghee and nuts. 
    Prep Time 5 minutes minutes
    Cook Time 15 minutes minutes
    Total Time 20 minutes minutes

    Ingredients

    • Rava/suji/semolina ½ cup
    • Milk ½ cup
    • Water 1 cup
    • Brown Sugar ¾ cup
    • Ghee 3 tbsp
    • Cashews 10-12
    • Orange color 2 pinch
    • Cardamom 3 or ½ tsp powder

    Instructions

    • Dry roast rava till it is slightly brown keep stirring and take care not to burn.
    • Add 1 tbsp ghee and roast the cashews. Take them and keep it in plate.
    • Add water and milk in the same pan and allow it to boil.
    • Add Kesari color and pinch of salt to it.
    • Then reduce the flame and slowly add rava to it.
    • Keep stirring continuously to prevent forming lumps
    • Once it cooked add the sugar and keep stirring.
    • Sugar will melt and then cook till it comes together.
    • Add ghee and stir continuously till ghee leaves the sides of the pan.
    • Finally add the cardamom powder and roasted cashews and switch off the flame.
    • Delicious rava kesari is ready.

    Notes

    You can roast the rava in ghee if you prefer.
    Keep in low flame and add rava slowly and stir continuously to avoid forming lumps.
    Adjust the sugar according to your preference. Can use ½ cup for very little sweet and use 1 cup if you want it more sweeter. ¾ cup is perfect for me.
    I used brown sugar. You can substitute with white sugar
    You can use saffron or turmeric powder for natural coloring.
    Use generous amount of ghee to get melt in mouth texture
    You can grease plate with ghee and spread the kesari. Once it is set you can cut them as neat pieces

    How to make Rava Kesari with step by step pictures

    Delicious rava kesari is ready.
