Archana is so versatile blogger and her blog has lot of Goan recipes and recipes from around the world. Do check her blog for some amazing and authentic vegetarian recipes. She suggested we make use of waste to make some exotic dish and I made this simple peerkangai thol chutney.

Ridge Gourd Peel Chutney Recipe | Peerkangai Thol Chutney
Ingredients
- Ridge gourd peels from 2 medium
- Urad dal 2 tsp
- Red chilli 2
- Coconut ⅓ cup optional
- Tamarind small lemon size
- Oil 1 tsp
- Salt as required
To Temper
- Oil 1 tsp
- Mustard ¼ tsp
- Urad dal ¼ tsp
- Curry leaves few
Instructions
- Peel the skin of ridge gourd and wash them throughly
- Heat oil and temper with urad dal and red chilli
- Once it browns add the ridge gourd peel.
- Saute it nicely till it shrinks and slightly color changes and switch off the flame
- Once it cools down take them in mixer along with salt and tamarind
- Grind them to fine paste adding little water.
- Now heat oil and temper with ingredients given under to temper
- Add this tempering to chutney
- Serve it with hot idli, dosa or rice.
