    Vegetable Omelette Recipe | Egg with veggies | Veg Omelette recipe with step-by-step pictures and instructions. Vegetable Omelette is a quick and protein-rich snack made with eggs, a lot of veggies and spices. You can make it as a quick snack, side dish or for breakfast. 

    Usually, I use leftover stir-fried vegetables and make for evening snacks. You can add colourful vegetables, add some cheese and make it for kids. This is my final recipe with egg for this week blogging marathon. Check out the egg kheema masala and egg cheese dosa which I posted earlier this week.

    Vegetable Omelette Recipe | Egg with veggies | Veg Omelette

    Ingredients

    • Eggs 3
    • Onion 1 big
    • Tomato 1 small
    • Green chilli 1 big
    • Mixed Vegetables 1 cup
    • Salt ½ tsp
    • Red chilli powder ½ tsp
    • Pepper powder ½ tsp
    • Oil 2 tsp
    • Butter 1-2 tsp

    Instructions

    • Heat oil in a pan add finely chopped onions, green chilli and saute for a minute.
    • Then add tomatoes and vegetables.
    • Next add salt, red chilli powder and pepper powder.
    • Saute for a few minutes till masala is nicely coated and veggies are crunchy.
    • Take eggs in a bowl
    • Add the vegetable masala to it.
    • Mix it nicely till it is combined.
    • Heat the pan and add little butter to it.
    • Then pour the egg mixture into it.
    • Close and cook on low flame.
    • Carefully flip the omelette and cook for a few seconds.
    • Vegetable omelette is ready.

    Notes

    I used cabbage, capsicum and carrot.
    You can use any vegetables of your choice

    How to make Vegetable Omelette with step by step pictures

    Next add salt, red chilli powder and pepper powder.

    Saute for a few minutes till masala is nicely coated and veggies are crunchy.

    Take eggs in a bowl

    Add the vegetable masala to it.

    Mix it nicely till it is combined.

    Heat the pan and add little butter to it.

    Then pour the egg mixture into it.

    Close and cook on low flame.

    Carefully flip the omelette and cook for a few seconds.

    Vegetable omelette is ready.

      Classic dish with eggs. I love how you added loads of veggies. On first sight, I thought as pizza. It looks so fluffy and I am sure egg lovers would grab and finish it off in no time.
