Vegetable Soup
Vegetable soup can be made with veggies of your choice. This simple vegetable soup takes less than 20 minutes to prepare with handful of ingredients. Soup is always so comforting. Warm bowl of soup is so good for cold, cough and winter season.
If you love spicy soup, you can try hot and sour vegetable soup. I love to make Country chicken soup or Herbal rasam when my kids have cold or cough. Personally, I always love tomato soup.

Challenge for this month in FB group is Soup recipes suggested by me. I was paired with Radha who made the delicious Vegan red lentil pumpkin soup using the secret ingredients red lentil and pumpkin seeds. I made this simple homestyle vegetable soup.
Ingredients
- Butter - Can be substituted with oil
- Garlic - makes it flavorful.
- Vegetable - Carrot, beans, cabbage, capsicum
- Pepper - spiciness
- Corn flour - thickening agent
- Ginger garlic paste

Instructions
Heat butter in a pan
Add chopped garlic to it and sauté for a few seconds.
Add the chopped onions to it and sauté for a minute.
Then add ginger garlic paste and mix.
Next, add the chopped vegetables to it and sauté for 1-2 minutes.
Add water to it and allow it to cook for 3-4 minutes.
Add salt and pepper powder to it.
Mix 1 tbsp of corn flour in ½ cup of water without any lumps.
Add corn flour mixture to the soup.
Boil for a few minutes and switch off the flame.
Delicious veg soup is ready.
Substitutions
- Vegetables - You can use cauliflower, broccoli, spring onions, peas, mushrooms, sweet corn.
- Thickening agent - use boiled potato, maida or rice flour to thicken the soup.
- Butter - Substitute with olive oil
- Pepper - You can use chilli flakes
Notes
- Adjust the consistency of the soup according to your preference by adding more or less water.
- Quantity of the vegetables depends on your preference.
- Use lot of different vegetables to make your soup colorful and healthy.
- Garnish it with coriander leaves to make it more flavorful.
