Whole Wheat Khara Buns | Savory Buns | Spicy buns recipe with step by step pictures and instructions. Khara buns are savory buns flavored with onions, green chilli and spices. My hubby loves savory bakes than sweet ones. So I always make masala buns with different stuffing or simply with onions and spices. I also love to eat like this rather than plain buns. You can make these for breakfast or evening snacks. If you are planning to make for breakfast, you can prepare the dough and keep in fridge after first proofing and bake them in morning.
It is very healthy as I made these using wheat flour and it came out so soft and flavorful. I added the masala along with flour and kneaded them. You can use any seasonings or spices or vegetables of your choice. I added milk powder since I want to clear the stock. You can skip it and make these delicious buns.

Ingredients
- Wheat flour 1 ½ cup
- Yeast 2 tsp
- Milk ¾ cup
- Honey 1 tbsp
- Salt ½ tsp or as required
- Milk powder ¼ cup optional
- Oil 2 tbsp
- Sesame seeds few to sprinkle optional
Masala
- Oil 2 tsp
- Onions 1
- Green chillies 1 big
- Red chilli flakes 1 tsp optional
- Oregano 1 tsp optional
- Pepper powder ½ tsp
- Cumin 1 tsp
- Garlic 5-6 crushed
- Coriander leaves finely chopped
Instructions
- Warm ¾ cup milk for 30-40 seconds in microwave.
- Add honey and yeast to it
- Mix it nicely and keep it aside for 10-15 minutes.
- In the meantime we can prepare the masala.
- Heat oil and temper with cumin seeds
- Once it browns add the crushed garlic and green chillies.
- Saute for few seconds and add the onions.
- Saute nicely for 2-3 minutes till it shrinks little.
- Now add red chilli flakes, oregano, salt and pepper powder.
- Mix it nicely and saute for 2-3 minutes.
- Garnish with finely chopped coriander leaves and switch off the flame.
- Allow it to cool down
- Now yeast mixture should be frothy. It shows yeast is active and we can proceed. If it is not frothy you can discard and use new one. There can be few reasons for yeast to be inactive. Yeast is very old and reaching expiry date. Quality of yeast is not good. If you add yeast to very hot water it will kill the yeast. Proofing of yeast is very important for any bread recipes. if the yeast is not active don't proceed further.
- Take flour, salt and milk powder in a bowl and mix it nicely.
- Add onion mixture, yeast mixture and mix to form dough.
- Now add oil and knead for 10-12 minutes till it is smooth and soft.
- Cover and allow it to rise till it doubles in size
- It will take between 1-2 hours. Mine got doubled in 1.5 hours.
- Punch the dough and knead for one minute.
- Grease the hands with oil and form lemon size balls
- Arrange them in baking tray lined with parchment paper
- Allow it to rise for 20-30 minutes till it increases size.
- Sprinkle some sesame seeds on the top
- Preheat the oven at 160°C for ten minutes and bake in same temperature in 20-25 minutes till it browns. Brush it with little butter/oil
- Serve the savory buns hot with cup of coffee/Tea.
