Chicken kothu parotta | How to make chicken kothu parotta in home

Kothu parota is very famous street food made with leftover parottas, salna, egg, chicken or any vegetables of our choice. Key to kothu parota is salna which adds unique flavour and taste to dish

Ingredients

  • 1 ½ tbsp Oil
  • 3 Parotta
  • 2 Eggs
  • ¾ Cup or 100 gms Chicken
  • 1 Big Onion
  • 1 Tomato
  • 2 tsp Ginger garlic paste
  • 1 Big Green chillies
  • 1 tsp Salt
  • ½ tsp Turmeric powder
  • ½ tsp Red chilli powder
  • 1 tsp Garam masala
  • Coriander leaves To garnish

Instructions

  • Cook the chicken with salt little ginger garlic paste and turmeric powder.
  • Once the chicken is cooked shred them and keep it aside. We can use the chicken pieces from curry too. In that case we can skip this step
  • Tear or shred the parottas and keep it aside
  • Heat oil in pan. Add onions and green chillies.
  • Saute till onions are transparent and add ginger garlic paste. Saute for 1 to 2 mins till the smell goes.
  • Add tomatoes and saute till it is mushy
  • Now move the mixture to one side of pan and crack the eggs
  • Scramble the eggs nicely. Then add all spice powders and mix nicely.
  • Add the shredded parottas and 1 cup salna.
  • Saute in high flame for 5 minutes till everything is mixed together.
  • Garnish with Coriander leaves
  • Serve hot with Raita or salna

Notes

We can adjust the quantity of eggs and chicken as per our taste.
Salna adds unique flavor to dish .So don't skip it. We can use any leftover gravy too.
Addition of curry leaves adds unique taste and flavor to dish. You can add it while sauting onions. I don't get curry leaves easily here as well as very expensive. So I didn't add it
