Pongal Kuzhambu Recipe | 7 vegetables Sambar for Pongal Festival

Pongal kuzhambu is traditonally made during Pongal festival using freshly harvested vegetables.

Ingredients

  • Onions 1 big
  • Tomato 2 small or 1 big
  • Salt as required
  • Red chilli powder 2 tsp
  • Coriander powder 3 tsp
  • Sambar powder 1 tbsp
  • Tamarind paste 1 tbsp
  • Oil 2 tsp
  • Mustard ½ tsp
  • Urad Dal ½ tsp
  • Curry leaves few
  • Coriander leaves to garnish

Vegetables

  • Raw banana ½ cubed
  • White pumpkin 10-12 cubes
  • Carrot ½ cup cubed
  • Broad beans 5
  • Beans 4-5
  • Brinjal 3
  • Sweet potato ½ cubed
  • Mochai/Field beans ¼ cup

Cooking Dal

  • Toor Dal 1 cup
  • Water 2 ½ cup
  • Turmeric powder ½ tsp
  • Hing ½ tsp

Instructions

  • Wash the dal and add water, turmeric powder and hing to it.
  • Pressure cook for 1 whistle in medium flame and cook in low flame for 5 minutes. Once the pressure releases, open and mash the dal.
  • Cut all the vegetables and keep it ready.
  • Heat oil and temper with mustard, urad dal and curry leaves.
  • Then add onions and saute for 1 minute.
  • Then add the chopped tomatoes and saute till soft.
  • Now add raw banana, beans, carrot, broad beans and mochai first and give a quick stir.
  • Then add red chilli powder, coriander powder and sambar powder.
  • Add little water, close and allow it cook.
  • Once it is half cooked, add pumpkin, sweet potato and brinjal.
  • Once it is boiled add the cooked dal and allow to boil.
  • Now add the tamarind paste and allow to boil for 5-10 minutes.
  • Finally switch off the flame and garnish with coriander leaves.
  • Mixed vegetable sambar is ready.
  • Enjoy it with Paal Pongal or rice.

Notes

You can use shallots which will make the sambar more flavorful.
Other vegetables you can use is yellow pumpkin, yam, potato.
Country vegetables lends nice taste so use more of them.
I used my homemade tamarind paste which is thick. You can use small lemon sized tamarind and extract juice from it and use.
