Wash the dal and add water, turmeric powder and hing to it.
Pressure cook for 1 whistle in medium flame and cook in low flame for 5 minutes. Once the pressure releases, open and mash the dal.
Cut all the vegetables and keep it ready.
Heat oil and temper with mustard, urad dal and curry leaves.
Then add onions and saute for 1 minute.
Then add the chopped tomatoes and saute till soft.
Now add raw banana, beans, carrot, broad beans and mochai first and give a quick stir.
Then add red chilli powder, coriander powder and sambar powder.
Add little water, close and allow it cook.
Once it is half cooked, add pumpkin, sweet potato and brinjal.
Once it is boiled add the cooked dal and allow to boil.
Now add the tamarind paste and allow to boil for 5-10 minutes.
Finally switch off the flame and garnish with coriander leaves.
Mixed vegetable sambar is ready.
Enjoy it with Paal Pongal or rice.
