Zucchini Paratha Recipe | Stuffed Zucchini Paratha recipe with step by step pictures and instructions. Zucchini paratha is variation of plain paratha stuffed with zucchini and spices. It is healthy and nutritious paratha which can be prepared for breakfast, lunch or dinner. Serve it with simple raita or pickle. We can almost use all vegetables in paratha. Zucchini is rich in vitamins, minerals and good for digestion and weight loss.

I sometimes mix zucchini and spices with the flour and knead the dough. This recipe uses zucchini as stuffing. I make both ways alternatively. We don’t get zucchini so often as it will be available only in big basket not any local stores. Mix zucchini with spices of your choice and stuffing is ready. Zucchini will leave lot of water like radish so take care to squeeze water completely. Next in my flatbread series is zucchini paratha with raita and no onion no garlic chana masala.

Zucchini paratha is variation of plain paratha stuffed with zucchini and spices.

Ingredients

  • Wheat flour 1 cup
  • Salt as required
  • Oil 2 tsp
  • Water as required
  • Stuffing
  • Stuffing
  • Zucchini 1 cup
  • Salt 1/2 tsp
  • Pepper powder 1/2 tsp
  • Green chilli 1 finely chopped
  • aamchor powder 1/2 tsp

Instructions

  1. Take wheat flour in bowl, add salt and oil.
  2. Mix it nicely with hands
  3. Then add water little by little and knead to form dough.
  4. Add little oil now and knead for 7-10 minutes till dough is soft and smooth.
  5. Cover and keep it aside for 15 minutes.
  6. Wash and grate the zucchini.
  7. Squeeze to remove all water.
  8. Take the squeezed zucchini in bowl
  9. Add salt, pepper powder, green chilli and aamchor powder to it
  10. Mix it nicely and stuffing is ready
  11. Take small balls, roll them as small circle.
  12. Place the stuffing in the middle.
  13. Bring all the edges and seal them
  14. Now roll them like chapati sprinkling little flour.
  15. Heat kadai and place the rolled paratha. Drizzle oil on the top.
  16. Flip them and cook on both sides till golden.
  17. Repeat the same for rest of the dough..
  18. Serve them hot with raita, curd, pickle or any gravy

Notes

Squeeze the juice of zucchini properly otherwise it will make your paratha soggy making it difficult to roll.

If you keep the stuffing for long time after preparing, make sure to squeeze them again while rolling.

You can add generous amount of ghee instead of oil. I used less oil

You can adjust the spices according to your preference.

It may be difficult to roll so use flour for dusting while rolling

How to make Zucchini Paratha with step by step pictures
