Ingredients

  • ½ cup Quinoa
  • 3 tbsp Moong dal
  • ¾ cup Jaggery
  • 2-3 tbsp Ghee
  • 1 tsp Cardamom powder
  • ¼ tsp Dry ginger powder
  • Salt a pinch
  • 10 Cashews

Instructions

  • Dry roast moong dal on low flame till the aroma comes.
  • Add quinoa to it.
  • Wash them and soak them for 20 minutes.
  • Add 2 cups of water and pressure cook for 1 whistle and ten minutes on low flame or 3-4 whistles on medium flame.
  • Once the pressure is released open and mash it nicely
  • Add jaggery to it and cook for a few mins till the jaggery is melted and everything is mixed.
  • Then add cardamom powder, dry ginger powder, and a pinch of salt to it.
  • Heat ghee in a pan and roast cashews till golden brown.
  • Add the cashews to Pongal along with ghee and give a quick mix and switch off the flame.
  • Healthy and delicious quinoa sweet Pongal is ready.
