Keerai Vadai

Keerai Vadai is a crispy and crunchy evening snack made with urad dal, chana dal and greens. Enjoy with a hot cup of Tea/Coffee.

Ingredients

  • Urad dal 1 cup
  • Chana dal ½ cup
  • Keerai 2 cups
  • Green Chilli 4
  • Cumin seeds 1 tsp
  • Ginger 1 tsp
  • Salt as required
  • Hing ¼ tsp
  • Oil for deep frying

Instructions

  • Take urad dal, chana dal in a bowl and soak for 2 hours.
  • Wash the greens, finely chop them and keep it aside.
  • After two hours, drain the water completely from dal and take it in a mixer.
  • Add green chilli, cumin seeds and ginger to it.
  • Grind to a coarse paste without adding any water. You can sprinkle little water if it is difficult to grind
  • Transfer it to a bowl.
  • Add finely chopped keerai, salt and hing to it.
  • Mix everything to thick batter.
  • Dip the hands in water and shape the vada in parchment paper or banana leaf and put a hole in the centre.
  • Heat oil and drop the shaped vada and fry them till golden.
  • Drain in a tissue and repeat the same for rest of the mixture.
  • Serve it with hot Tea/Coffee.

Notes

Grind to coarse paste adding very little water as possible to make the vada crispy.
If you add more water, it will be difficult to shape the vada and also soak more oil.
Flatten the vada thin instead of making it thick.
Fry in medium flame and carefully cook both sides to get crispy vada.
Serve it with coconut chutney. I would love to eat it as such.
