Wash and soak the basmati rice for 20-30 minutes
Peel, wash and grate the beetroot and keep it ready.
Heat oil and temper with mustard and urad dal.
Once it browns add the finely chopped onion and saute for 1 minute.
Then add ginger garlic paste and saute till raw smell goes.
Now add the grated beetroot and saute nicely.
Then add red chilli powder, salt, turmeric powder and garam masala and mix.
Add 1.5 cups of water to it.
Once it boils add the rice and close the pressure cooker. Check the seasoning before closing the lid.
Pressure cook for 1 whistle in medium and 5 minutes in low flame or 2 whistles whichever is faster.
Once the pressure releases open the lid and gently fluff it with spoon.
Serve hot beetroot rice with raita.
