Ingredients
All Purpose flour 1 cup
Butter 60 grams
Powdered sugar ½ cup
Desiccated coconut 1 cup minus 1 tbsp
Baking powder ¼ tsp optional
Milk few drops optional
Instructions
Take butter and powdered sugar in a bowl
Mix butter and sugar with spoon/whisk to smooth creamy texture.
Then add desiccated coconut and mix well.
Then add all purpose flour and mix well.
Add little milk and form it into smooth dough.
Grease your hands and take small balls and flatten them.
Preheat the oven to 175°C for 10 minutes.
Place the baking tray inside oven and bake in the same temperature for 18-20 minutes until it is crisp
Remove from the oven immediately and cook it in wire rack
Enjoy the coconut cookies with hot Coffee.
Notes
Baking time may vary depending on thickness of biscuits you roll. Always keep an eye after 15 minutes.You can coat the cookies with desiccated coconut for added flavorCookies always looks soft while taking out and later becomes firmIf the mixture is dry, add few drops of milk to form a dough. If it is sticky you can 1 tbsp flour extra and form dough.
