Uppu Seedai Recipe | Salt Seedai | Seedai

Uppu seedai is a crispy and crunchy snack made with rice flour.

Ingredients

  • Rice flour 1 cup
  • Urad dal powder 1.5 tbsp
  • Butter 2 tbsp
  • Sesame seeds 1 tsp
  • Hing ΒΌ tsp
  • Salt as required
  • Oil for frying.

Instructions

  • Roast urad dal and powder it to prepare urad dal powder
  • Dry roast the rice flour for 1-2 minutes without changing the color and allow it to cool down.
  • Take rice flour and urad dal powder and sieve them a couple of times. This is a very important step. Don't skip it.
  • Take sieved rice flour and urad dal powder in a bowl.
  • Add salt, hing, sesame seeds, and butter to it.
  • Rub it gently with flour and then slowly add water.
  • Knead to form a soft dough.
  • Gently roll the dough to form small balls.
  • Repeat the same for the rest of the balls and allow them to dry in paper or tissue for 10 minutes.
  • Heat oil and fry them in low flame till it is crispy and golden.
  • Crispy and delicious uppu seedai is ready. Store in an airtight container.

Notes

I used my idiyappam flour. You can use store-bought rice flour too.
Dry roast the flour without changing the color till all moisture is removed.
Don't skip the sieving step as it helps to prevent bursting. You can sieve them up to 4 times
Always roll the seedai very gently and soft. Don't roll it hard.
Allow it to dry for 10 minutes before frying.
Always put 1 or 2 seedai in oil and check if it is not bursting and add more.
Always fry in low flame for more time for crispier seedai. If you cook in medium or high flame seedai will be cooked outside but soft inside.
Some people use coconut too. you can dry roast and add it if using.
If you are using store-bought urad dal flour, roast it along with rice flour.
