Warm the water and add honey, yeast and mix. Water should be warm not very hot. I usually microwave the water for 20 seconds. Close with lid and keep it aside for 10-15 mins to proof the yeast.
After 10 mins yeast mixture should be frothy. It shows yeast is active and we can proceed. If it is not frothy you can discard and use new one. There can be few reasons for yeast to be inactive. Yeast is very old and reaching expiry date. Quality of yeast is not good. If you add yeast to very hot water it will kill the yeast. Proofing of yeast is very important for any bread recipes. if the yeast is not active don't proceed further.
Take flour and salt in bowl and mix nicely
Add the frothy yeast mixture to it and knead to form a dough. Add extra water if required. I added ¼ cup extra water while kneading. Amount of water required depends on your flour.
Now add 2 tbsp oil and knead nicely. This step is very important. We should knead nicely for ten minutes. Oil the dough and allow it to proof till it doubles in size.
It usually take between 1-2 hours depends on climate. If you keep in warm place it will proof faster. I took 1 ½ hours for me to double in size
Now punch the dough and knead for 1-2 mins.
Now you can roll the dough to big pizza base. I usually like to have medium sized pizzas. So I divided the dough into two and flattened them.
Roll the dough into circle. You can roll them thick or thin according to your preference. I usually roll them medium. Prick it with fork so they don't puff up while baking. Actually I forgot to do this step.
Transfer them to your baking tray lined with parchment paper. You can use grease pizza tray with little flour and use it too.
Leave it aside for 15 minutes to raise a little. If you roll the pizza base very thin you can skip the below steps and go to assembling.
Preheat the oven to 200°C for 20-25 mins and bake in the same temperature for 10 mins.
Now pizza base is ready.
Proceed with the steps for assembling if you are making immediately
Otherwise we can cool them and store in zip lock cover in fridge.
Assembling the pizza
Cut all the vegetables and make it ready
I microwaved broccoli and cauliflower for few mins.
Take pizza base and spread pizza sauce.
Assemble all the veggies. I used more vegetables and less cheese. Use as per your preference.
Sprinkle little salt and pepper on top of vegetables.
Grate the cheese and sprinkle Italian seasoning and chilli flakes.
Baking
Preheat the oven to 200°C for 20-25 mins and bake in the same temperature for 10-15 mins till cheese is melted and base is browned.
Notes
You can choose any vegetables of your choice. You can add the seasoning according to your preference.
