Wash and cut the potatoes as cubes and cauliflower.
Microwave them for 3-4 minutes till 70% cooked.
Finely chop the onions and keep it ready.
Heat oil and temper with cumin seeds
Once it browns add the finely chopped onions and saute till transparent
Then add the tomatoes and saute till mushy.
Then add the turmeric powder, red chilli powder, garam masala and salt.
Next add the half cooked potatoes and cauliflower.
Mix it nicely, close and allow it to slow cook till potatoes and cauliflower is done.
Add kasuri methi to it and mix.
Finally garnish with coriander leaves and switch off the flame.
Aloo Gobi is ready. Serve it with rice or roti.
