Ashoka Halwa Recipe | Pasi Paruppu halwa

Ashoka halwa is melt in mouth halwa made with moong dal, sugar, and ghee.

Ingredients

  • Moong dal ¾ cup
  • Sugar 1.5 cup
  • Ghee ¾ cup
  • Wheat flour 2 tbsp
  • Cashews ¼ cup heaped
  • Orange color a pinch optional
  • Cardamom powder 1.5 tsp
  • Water 2.5 cups to cook moong dal

Instructions

  • Dry roast moong dal in a Kadai without changing the color.
  • Add moong dal to the cooker along with water and pressure cook for 3-4 whistles.
  • Once it cools down, transfer the dal to the mixer.
  • Grind moong dal to smooth batter.
  • Heat 2 tbsp ghee and roast the cashews.
  • Once it browns transfer to the plate.
  • In the same ghee, add the wheat flour and roast till raw smell goes.
  • Add the moong dal paste to it and mix.
  • Now add sugar to it.
  • Keep stirring the mixture as sugar will melt.
  • Add a pinch of orange color to it and mix.
  • Add ghee at regular intervals and continue stirring.
  • Stir till it the mixture comes together and ghee starts to ooze out.
  • Add the cardamom powder to it.
  • Next, add the roasted cashews and mix.
  • Glossy and melt in mouth Ashoka halwa is ready.

Notes

Use a generous amount of ghee to get the correct texture of the halwa.
Add ghee at regular intervals and cook in medium flame.
Adding food color is optional and can be completely skipped as well.
