Baked Herb Roasted Potatoes recipe | Roasted potatoes with herbs
Potatoes are tossed with mint, coriander, Italian herbs and roasted in oven

- Baby potatoes ½ kg
- Pepper powder ½ tsp
- Red chilli powder ½ tsp
- Salt ½ tsp or as required
- Italian seasoning 1 tsp
- Garlic 5-6 cloves
- Mint leaves ¼ cup finely chopped
- Coriander leaves 2 tbsp finely chopped
- Oil 1 tbsp
Take baby potatoes and wash them thoroughly to remove any dirt. Cube them if the potatoes are big.
Take them in a bowl and add finely chopped mint, coriander leaves, crushed garlic, salt, pepper powder, red chilli powder, oregano and oil.
Mix it nicely till everything is combined.
Transfer to baking tray lined with parchment paper.
Pre heat the oven to 225°C for ten minutes and bake in the same temperature for 25-30 minutes till it is golden.
Herb roasted potatoes is ready to serve.
You can roast them in pan with little oil if you don't have oven.
Adjust the seasoning as per your choice.
