Baked Herb Roasted Potatoes recipe | Roasted potatoes with herbs recipe with step by step pictures and instructions. Baked herb roasted potatoes are tossed with mint, coriander, Italian herbs and roasted in oven. This dish is so flavorful with the addition of different herbs. We can use very less oil when we bake in oven and enjoy these treats guilt-free. I finely chopped the mint and coriander and added to them. You can make paste of green chillies, mint and coriander and add them too.

Potatoes are universal favorite to everyone. Customize the recipe to include fresh herbs like thyme, rosemary, parsley, basil etc. Since I didn’t get those in local shops used italian seasoning. Roast the potatoes in pan with oil if you don’t have oven. I baked these in grill mode. Make this delicious potatoes as side dish or as snacks for kids. Lets see how to make these roasted potatoes.

Ingredients

  • Baby potatoes 1/2 kg
  • Pepper powder 1/2 tsp
  • Red chilli powder 1/2 tsp
  • Salt 1/2 tsp or as required
  • Italian seasoning 1 tsp
  • Garlic 5-6 cloves
  • Mint leaves 1/4 cup finely chopped
  • Coriander leaves 2 tbsp finely chopped
  • Oil 1 tbsp

Instructions

  1. Take baby potatoes and wash them thoroughly to remove any dirt. Cube them if the potatoes are big.
  2. Take them in a bowl and add finely chopped mint, coriander leaves, crushed garlic, salt, pepper powder, red chilli powder, oregano and oil.
  3. Mix it nicely till everything is combined.
  4. Transfer to baking tray lined with parchment paper.
  5. Pre heat the oven to 225°C for ten minutes and bake in the same temperature for 25-30 minutes till it is golden.
  6. Herb roasted potatoes is ready to serve.

Notes

You can roast them in pan with little oil if you don't have oven.

Adjust the seasoning as per your choice.

How to make Baked Herb Roasted Potatoes with step by step pictures

Mix well and toss everything with potatoes

Transfer to baking tray lined with parchment paper.

  • Roasted herbed potatoes sound absolutely lip smacking and irresistible ! I would love to have them with a dash of chaat masala and sorinkle of lemon juice just like a chat. Best part is that it is guilt-free.
  • Now, this is one perfect snack for these rainy days. Will love to eat some (then rue about my weight gain ) and enjoy the rains. A bowl of soup on the side will make it a perfect meal. Mouthwatering delicious!
