    Potato Methi Roast recipe | Aloo Methi Roast | Potatoes with Fenugreek leaves recipe with step by step pictures and instructions. Learn how to make methi potato roast. Boiled potatoes are cooked with fresh methi leaves. Methi leaves takes the dish to next level. We always love methi leaves as it makes the dish so flavorful. I used the same method of making potato and added fenugreek leaves at the end. You can omit the onions and tomatoes and make simple aloo methi roast too. 

    Initially I used to cook methi leaves separately only. We used to grow methi leaves in our terrace garden. At that time one day my neighbor suggested adding methi leaves to potato or any vegetables. After that only I started using methi with potato or other vegetables. It goes well with chicken too. It is dry starter dish which goes well with rice or chapati. We can indirectly add some greens to kids favorite potato and make them eat. I used baby potatoes but you can use normal potatoes and cube them.

    Potato Methi Roast recipe | Aloo Methi Roast | Potatoes with Fenugreek leaves recipe

    Learn how to make methi potato roast.
    Prep Time 10 minutes minutes
    Cook Time 20 minutes minutes
    Total Time 30 minutes minutes

    Ingredients

    • Potatoes 500 grams
    • Methi leaves 1 small bunch
    • Onions 2 sliced
    • Garlic 4 pods crushed
    • Ginger garlic paste 1 tsp
    • Tomato 1
    • Salt 1 tsp or as required
    • Red chilli powder 1 ¼ tsp
    • Turmeric powder ½ tsp
    • Garam masala ½ tsp
    • Oil 1-2 tbsp
    • Mustard ½ tsp
    • Urad dal ½ tsp
    • Curry leaves few
    • Coriander leaves to garnish

    Instructions

    • Pressure cook the potatoes for two whistles.
    • Remove the skin and keep it ready.
    • Heat oil and temper with mustard and urad dal
    • Once it browns, add the crushed garlic and curry leaves.
    • Then add the onions and give a quick saute.
    • Now add ginger garlic paste and saute till raw smell disappears.
    • Then add tomatoes and saute till mushy
    • Add salt, turmeric powder, red chilli powder and garam masala
    • Then add the peeled potatoes and toast nicely
    • Then add the finely chopped methi leaves for saute for few mins till it is cooked.
    • Garnish with coriander leaves and switch off
    • Serve potato methi roast with hot rice.

    Notes

    Increase or decrease the quantity of methi leaves according to your taste.
    You can add kasuri methi if you don't get fresh methi leaves

    Then add tomatoes and saute till mushy

    Add salt, turmeric powder, red chilli powder and garam masala

    Then add the peeled potatoes and toast nicely

    Then add the finely chopped methi leaves for saute for few mins till it is cooked.

    Garnish with coriander leaves and switch off

    Serve potato methi roast with hot rice.
