Potato Methi Roast recipe | Aloo Methi Roast | Potatoes with Fenugreek leaves recipe

Ingredients

  • Potatoes 500 grams
  • Methi leaves 1 small bunch
  • Onions 2 sliced
  • Garlic 4 pods crushed
  • Ginger garlic paste 1 tsp
  • Tomato 1
  • Salt 1 tsp or as required
  • Red chilli powder 1 ¼ tsp
  • Turmeric powder ½ tsp
  • Garam masala ½ tsp
  • Oil 1-2 tbsp
  • Mustard ½ tsp
  • Urad dal ½ tsp
  • Curry leaves few
  • Coriander leaves to garnish

Instructions

  • Pressure cook the potatoes for two whistles.
  • Remove the skin and keep it ready.
  • Heat oil and temper with mustard and urad dal
  • Once it browns, add the crushed garlic and curry leaves.
  • Then add the onions and give a quick saute.
  • Now add ginger garlic paste and saute till raw smell disappears.
  • Then add tomatoes and saute till mushy
  • Add salt, turmeric powder, red chilli powder and garam masala
  • Then add the peeled potatoes and toast nicely
  • Then add the finely chopped methi leaves for saute for few mins till it is cooked.
  • Garnish with coriander leaves and switch off
  • Serve potato methi roast with hot rice.

Notes

Increase or decrease the quantity of methi leaves according to your taste.
You can add kasuri methi if you don't get fresh methi leaves
