Ingredients
Banana 4 medium
Powdered jaggery 4-5 tbsp
Cardamom powder 1 tsp
Nuts 2 tbsp optional
Coconut milk
Coconut ½
Water 1 cup
Instructions
Take the chopped coconut pieces in mixer
Grind it nicely adding little water.
Then extract the coconut milk adding 1 cup of water.
Chop the banana as round pieces and keep it ready.
Take extracted coconut milk in a bowl.
Add sugar to it.
Then add cardamom powder and mix.
Finally add the chopped banana.
Top it with nuts.
Banana rasayana is ready
Serve it immediately or chilled.
Notes
Coconut milk must be thick so don't add too much water. I used half of the medium sized coconut. You can use sugar instead of jaggery. Adjust the sugar according to your preference. We like to refrigerate and have it chilled as dessert
