Beetroot Halwa is one of the popular Indian dessert made using beetroot, sugar and milk.

Ingredients
Beetroot 2 ½ cups grated
Sugar ¼ cup + 2 tbsp
Cardamom powder 1 tsp
Cashews ¼ cup
Milk ½ litre or 500 grams
Ghee 1-2 tbsp
Instructions
Heat ghee in a pan
Add cashews to it
Roast them till golden and transfer to plate.
In the same pan add grated beetroot.
Saute then for 4-5 minutes
Then add milk to beetroot.
Keep stirring continuously and cook beetroot in milk
Once the beetroot is cooked and milk is reduced add sugar.
Keep stirring till it comes together.
Add roasted cashews and cardamom powder to it
Delicious beetroot halwa is ready
Enjoy it warm with ice cream.
Notes
Adjust the sugar according to your taste.You can any nuts of your preference.Since we use milk, keep it in fridge and warm when servingYou can use condensed milk instead of milk and reduce the sugar.
