Bhai Ice Cream Recipe | Madurai Special Bhai Ice Cream | Jigarthanda Ice Cream

Bhai Ice Cream is Madurai special ice cream prepared with milk, sweetened khoya and caramel.

Ingredients

  • Milk 1 litre
  • Sugar ½ cup
  • Sweetened Khoya/Palgova 100 grams
  • Fresh Cream ½ cup
  • Vanilla essence 1 tsp

Instructions

  • Prepare the Palgova if you are preparing in home and keep it ready. I prepared using milk powder in microwave this time.
  • Heat milk in heavy bottomed pan.
  • Allow it to boil stirring continuously till milk is reduced to half of its volume.
  • Keep in low flame and start preparing caramel.
  • Take sugar with 2 tbsp of water in pan.
  • It will crystallize and melt.
  • Boil till it reaches golden brown color to form caramel.
  • Carefully add the caramel to reduced milk.
  • Keep stirring and mix well.
  • Next add palgova to it and mix without lumps.
  • Then add cream to it and mix
  • Finally add vanilla essence, mix and switch off the flame.
  • Allow it to cool down.
  • Once it cools down, take in a mixer
  • Blend it well.
  • Transfer to freezer safe container and keep it in fridge for 2-3 hours.
  • Next take again and blend it well. Repeat the process for 2-3 times.
  • Refrigerate for 8 hours or overnight till it is set completely
  • Delicious Bhai Ice Cream is ready.

Notes

I blended it total of 3 times and it was so creamy and without any ice crystals formation.
Careful while add caramel to reduced milk as it will bubble. Keep in low flame
You can use store bought palkova. I prepared using milk powder in microwave. Will share the recipe soon
