Bhojpuri Mutton Curry | Uttar Pradesh Style Mutton Curry

Bhojpuri Mutton Curry is speciality of Uttar Pradesh where mutton pieces are slow cooked in freshly grounded spices.

Ingredients

  • Mutton ½ kg
  • Onion 3 big
  • Ginger garlic paste 1 tbsp
  • Bay leaves 2
  • Red Chilli 7-8
  • Coriander seeds 2 tbsp
  • Cumin seeds 1 tbsp
  • Black pepper 1 tsp
  • Poppy seeds 1 tsp
  • cinammon stick 1 inch
  • Cardamom 2
  • star anise 1
  • cloves 5
  • Mace ¼ tsp
  • Turmeric powder ½ tsp
  • Oil 3 tbsp
  • Salt as required
  • Coriander leaves few

Instructions

  • Soak red chillies in hot water for ten minutes
  • Take 2 onions, ginger garlic paste, red chilli, coriander seeds, cardamon, cinnamon, cloves, star anise, mace, turmeric powder, poppy seeds, pepper and 2 tsp cumin in mixer.
  • Grind them to smooth paste.
  • Pressure cook the mutton adding salt, turmeric powder for 5-6 whistles.
  • Heat oil and add bay leaves.
  • Once it browns add remaining cumin seeds
  • Then add finely chopped onions and saute them till brown
  • Then add the cooked mutton pieces and saute for 5 minutes.
  • Now add the grounded masala paste and saute nicely for 5-10 minutes.
  • Then add water and allow it to boil for 15 minutes till oil oozes out.
  • Garnish with coriander leaves.
  • Serve hot with rice/roti

Notes

You can slow cook the mutton in pan instead of pressure cooking.
Adjust the spices according to your preference.
