Bitter Gourd Masala | Pavakkai Masala recipe

Ingredients

  • Bitter gourd 175 grams
  • Onions 2
  • Tomato 1
  • Red chilli powder 1 tsp
  • Turmeric powder ½ tsp
  • Salt as required
  • Oil 2 tbsp
  • Tamarind extract 2 tbsp
  • Jaggery powder 1 tsp

Instructions

  • Wash and cut the bitter gourd. I finely chopped them so it gets mixed with onions and tomatoes
  • Add salt to it and leave it for 30 minutes.
  • After 30 minutes squeeze the water and keep it ready. This helps to remove bitterness.
  • Finely chop onions and tomatoes
  • Heat oil in kadai
  • Add the bitter gourd and mix
  • Add salt and continue to saute
  • Saute nicely till it is golden in color
  • Now add finely chopped onions, tomatoes and spice powders
  • Add little water and allow onions and tomatoes to saute nicely. You can add more oil in this stage instead of water.
  • Now add the tamarind extract and jaggery powder.
  • Saute nicely for 5-10 minutes till it is combined and oil separates
  • Serve pavakkai masala with hot rice

Notes

I finely chopped the bitter gourd. you can cut them as rounds also
It taste good with the oil used. If you like you can add more oil while sauteing onions and tomatoes
Adding salt to bitter gourd and keep for sometime is optional. But it helps to remove the bitter taste. If you have time you can do it.
