Bottle Gourd Basundi | Sorakkai Basundi | Lauki Basundi

Bottle Gourd Basundi is fusion dessert where traditional basundi is flavored with bottle gourd.

Ingredients

  • Bottle gourd/Sorakkai 1 cup
  • Milk 2 cups or ½ litre
  • Sugar 3-4 tbsp
  • Ghee 1 tbsp
  • Cardamom powder 1 tsp
  • Cashews 1 tbsp
  • Badam 1 tbsp
  • Saffron few strands
  • Pista 1 tbsp

Instructions

  • Peel the skin of bottle gourd and discard the center part with seeds and grate them finely.
  • Heat ghee in a pan.
  • Add the grated bottle gourd and saute it for 3-4 minutes till all its moisture is absorbed.
  • Then add milk and allow it to boil.
  • Once it comes to boil reduce the flame
  • Keep stirring scraping the sides till it reduces to half of its volume. it will take around 20-25 minutes.
  • Then add sugar and continue to boil for 5 minutes. Consistency can be little thin as basundi will get thicker after cooling down.
  • Garnish with chopped nuts, cardamom powder and saffron and mix.
  • Switch off the flame and allow it to cool down.
  • Serve chilled Lauki basundi

Notes

Adjust the sugar according to your taste
Consistency of basundi can be little thin when switching off as it gets thicker after cooling down.
Add saffron for rich taste. I skipped them this time since I didn't have it in stock.
You can add little milk to dilute if basundi is too thick while serving
