Cabbage Thoran

Cabbage thoran is a simple poriyal recipe from Kerala. It is one of the essential dishes of Onam Sadya.

Ingredients

  • Cabbage 1 cup tightly packed
  • Salt as required
  • Turmeric powder ½ tsp
  • Hing ¼ tsp

To grind

  • Grated coconut ¼ cup
  • Green chilli 2
  • Cumin 1 tsp

To temper

  • Coconut oil 2 tsp
  • Mustard ½ tsp
  • Urad dal ½ tsp
  • Cumin seeds ½ tsp
  • Curry leaves few
  • Red chilli 2

Instructions

  • Finely chop the cabbage, wash, and drain the water.
  • In a mixer take grated coconut, green chilli, and cumin seeds.
  • Pulse it coarsely and make them ready.
  • Heat coconut oil in kadai and temper with mustard, urad dal, cumin seeds, red chilli and curry leaves.
  • Once it browns add the finely chopped cabbage and saute for 1 minute.
  • Add salt, hing and turmeric powder to it.
  • Sprinkle little water and allow it to cook.
  • Close with lid and cook for 3-4 minutes.
  • Then add the ground masala.
  • Cook for a few minutes and switch off the flame.
  • Delicious cabbage thoran is ready.

Notes

Use fresh cabbage for good results.
Adjust the green chilli according to your preference
Use small onions along with coconut.
You can use other veggies like beans, carrot along with cabbage
