Carrot Burfi Recipe | Gajar Ki Burfi | How to make Carrot Burfi

Carrot Burfi is quick and easy to make sweet recipe made with easily available ingredients.

Ingredients

  • Carrot 500 grams
  • Milk powder ¾ cup
  • Sugar ½ cup + 2 tbsp
  • Condensed milk ¼ cup
  • Milk 1.5 cups
  • Ghee 3 tbsp
  • Cardamom 3
  • Nuts cashew, badam and pista 3 tbsp finely chopped

Instructions

  • Take 3 cardamom and crush them in pestle and remove the skin and keep it ready.
  • Finely grate the carrot and keep it ready.
  • Finely chop the nuts and keep it ready
  • Heat ghee in a pan.
  • Add finely grated carrot to it
  • Saute for 4-5 minutes till the raw smell goes.
  • Then add milk and saute nicely till the carrot is cooked and milk is reduced.
  • Now add sugar and condensed milk and mix.
  • Then add milk powder and mix it.
  • Mix it nicely without forming lumps and add cardamom powder.
  • Cook it till the mixture comes together and all moisture is removed and switch off the flame
  • Grease baking tray with ghee
  • Transfer the mixture to greased tray and press it to spread evenly.
  • Garnish it with chopped nuts.
  • Allow it to set completely. You can keep it in fridge to set quickly.
  • Carefully slice them and serve once set
  • Carrot burfi is ready.

Notes

Don't be panic if the burfi is not set properly. keep in fridge overnight and you will get neat slices.
You can skip condensed milk and add more sugar.
You can mix milk powder along with milk and add it so it is easy to mix without forming lumps
Check the taste and adjust the sugar according to your preference.
Use cardamom powder instead of whole cardamom.
